Balsamic Vinegar of Modena

For the production of I.G.P. Balsamic Vinegar of Modena and Organic I.G.P. Balsamic Vinegar of Modena we scrupulously follow the unique Production Regulations, certified and proven by CSQA. This natural, artisanal preparation takes a lot of time compared to industrial procedures, but it allows us to bring the typical products of our land to our customers' tables in the most excellent way from every point of view. Each of our Balsamic Vinegar of Modena I.G.P. and Organic Balsamic Vinegar of Modena I.G.P. is free of thickeners, colourings, preservatives, antioxidants, sweeteners and added sulphites. It is the result of a skilful blend of the best Must extracted from the indigenous Modena grapes grown in the family vineyards, rigorously selected, and Wine Vinegar. This blend undergoes a process of refinement and/or ageing in old oak barrels. The end result is our Organic Balsamic Vinegar of Modena I.G.P. and Organic Balsamic Vinegar of Modena I.G.P.: a tasty, dark brown food and wine product of excellent density and quality. It is ideal for enriching your every dish with the excellence of Modena.

There are two qualities of Traditional Balsamic Vinegar of Modena D.O.P. and Acetaia Marchi offers both: Affinato and Extravecchio. They differ from the other products for the long and particular period of refinement and/or ageing certified and proven by KIVA CERMET. These phases of maturation and fermentation are followed with extreme precision at our Acetaia in Modena. The final result is a pure and valuable product with an intense, deep and bright black colour. This product is characterised by a unique and unmistakable bouquet, fragrant and complex, but nevertheless well blended, penetrating and persistent. The flavour is intense, with an evident but pleasant and harmonious acidity; it is sweet, sour and well balanced, velvety, intense and persistent. All this creates a perfect combination with the olfactory characteristics that distinguish our Traditional Balsamic Vinegar of Modena PDO. For the production of our vinegar we scrupulously adhere to the Single Production Disciplinary, natural, artisan and traditional preparation. This allows us to bring the typical products of our land to our customers' tables in the most excellent way from every point of view. Balsamic Vinegar of Modena

Balsamic Condiment is a dark and clear sweet-and-sour product. It is obtained by the union of concentrated must of local grapes and the addition of an excellent Wine Vinegar. The splendid result of this combination is left to mature in ancient barrels made from various types of precious wood, in order to carry out the acetic fermentation, which allows us to obtain the explosion of flavours and smells that distinguishes this ancient product.
