We are an Organization of 14 producers which represents the first cultivated mushrooms’ production center in Italy with 18000 tons produced per year. We are part of the Certified Italian Mushroom Consortium, guaranteeing the Italianness of our products. We cultivate through a process that respects the natural cycles of the mushroom. The entire supply chain is within the Company, from production to distribution in markets, large-scale distribution and food industry. With less than 24h between collection and delivery throughout the national territory, we guarantee an always fresh product that boasts important certifications. Frozen Mushrooms

BAKED MUSHROOMS Already cooked and ready to be served after the simple re-heating. Our fresh and cultivated champignon are harvested and processed within a day in our certified factories in order to maintain the best organoleptic characteristics of the product. The production process has very high quality standards: setting, washing, cutting and baking with different types of yield according to the different customer’s needs. The rapid drop in temperature and the IQF freezing process allows the preservation of product’s characteristics. It can be packaged in retail, food-service or industrial packs. There is no loss of water as it is evaporated during the baking, so you can have an extreme concentration of mushroom flavor and a uniform brown color without the presence of grilling marks.

IQF CHAMPIGNON MUSHROOMS Our fresh and cultivated champignon are harvested and processed within a day in our certified factories in order to maintain the best organoleptic characteristics of the product as fresh. The production process has very high quality standards: setting, washing, cutting, IQF freezing in liquid nitrogen to preserve over 95% of the nutritional, chemical-physical, microbiological and organoleptic properties of the fresh product. It can be packaged in retail, food-service or industrial packs.

Vegetables are purchased (already peeled, cut and washed) during harvest in order to obtain the best result from nature. They are cooked with a natural seasoning based on herbs and aromatic spices that enhance (not cover) their characteristic flavor. The product (both chilled and frozen) can be packaged in retail, food-service or industrial packs. The product, after the cooking process, is frozen in IQF (Individually quick frozen) in liquid nitrogen to preserve over 95% of the nutritional, chemicalphysical, microbiological and organoleptic properties of the fresh product.

IQF SAUCES (MUSHROOMS and BASIL PESTO) Uniqueness size: small drops of IQF frozen sauce that allow an easy dosing (as the liquid product) and a very quick thawing (even over cooked pasta). Customized recipes according to different uses and customer’s needs. Once the sauce is made, it is dosed in a liquid nitrogen bath at -197° Celsius degrees to preserves over 95% of its typical nutritional, chemical-physical, microbiological and organoleptic properties. The product can be packaged in retail, food-service or industrial packs.

PRE-COOKED AND SEASONED MUSHROOMS Already cooked with seasoning and ready to be served after re-heating. There is no loss of water keeping all flavor internally. Our fresh and cultivated champignon are harvested and processed within a day in our certified factories in order to maintain the best organoleptic characteristics of the product. The production process has very high quality standards: setting, washing, pre-cooking, different thickness cutting and dressing with a natural mix of aromatic herbs to enhance (not cover) the characteristic mushroom flavor. Once drained, the mushroom is hot-packed for internal pasteurization of the package, covered with sunflower seeds oil and vacuum sealed. The rapid drop in temperature brings the normal shelf-life of the product up to 60 days in fridge.
