Pastificio di Chiavenna was founded as a pasta factory by Carlo Moro in 1868 in the north of Italy and is now specialized in the production of special and dietetic dried pasta like gluten free, baby pasta (organic and conventional), extra-dried pasta, pasta with legumes, 100% rye pasta, low protein, buckwheat pasta and PGI buckwheat pasta, organic pasta. Certifications are BRC and organic certification for the production of organic pasta. Pastificio di Chiavenna Srl obtained the Protected Geographical Indication (PGI) by the European Union authority for the typical pasta recipe of Valtellina in the north of Italy "Pizzoccheri", a unique specialty with buckwheat.

Pizzoccheri della Valtellina PGI Organic - in cardboard 500g Pastificio di Chiavenna pays more and more attention to biocompatible productions, that’s why it has created also the Organic Pizzoccheri della Valtellina PGI (Protected Geographical Indication). The Organic Pizzoccheri della Valtellina PGI are produced starting from organic durum wheat semolina and organic whole buckwheat flour rich in fibers and have the typical color and taste of buckwheat.

Pizzoccheri della Valtellina PGI 500g The Pizzoccheri della Valtellina are produced starting from durum wheat semolina, durum wheat flour and buckwheat flour and have the typical color and taste of buckwheat and a high content of fibers. The culture of Pizzoccheri della Valtellina comes from the ancient diffusion and from the large employment of the buckwheat that, being largely cultivated and used on the territory of Valtellina Valley (north of Italy), was a fundamental ingredient of the Valtellina cooking. We had the first evidences, not verbal, stating the production of Pizzoccheri della Valtellina in the province of Sondrio, thanks to testamentary deeds of 1750; it is however supposable that the production and consumption of Pizzoccheri della Valtellina are prior to the first years of 1700. The production of Pizzoccheri della Valtellina is considered by the Valtellina inhabitants a traditional activity related to their own history and to their own culture; the sauce used for this particular pasta contains different ingredients coming from cultivations and productions that are typical of Valtellina (butter, cheese, vegetables like savoy cabbage, potatoes etc.).
