Every batch of Pecorino Siciliano PDO is unique, emblem of the greatest Sicilian dairy craftsmanship. Produced only from whole raw sheep’s milk from breeds raised of Sicily and feeded with natural pasture. Produced with traditional processing methods, hand salting and seasoning exclusively in cells with natural ventilation.

Made of cow’s milk from bovine breed raised in Modica and feeded with natural fodder (of spontaneous essences from the Hyblean plateau). Seasoned for 3 to 6 months. The crust is smooth, thin but compact. The color of the pasta goes from golden yellow to straw yellow. Slightly spicy in the first months of seasoning, and therefore it is perfect to be tasted on its own. Then the flavor is accentuated in the following months, and therefore it is used as grated cheese.

Zappalà salted Ricotta is a product of ancient tradition, protagonist of numerous dishes of the Sicilian gastronomy. To obtain the salted ricotta, the fresh ricotta undergoes a process of dry-salting and of drying for about two months. As a matter of fact, the sweet and gentle taste of the fresh ricotta is combined with the savory notes of salting. Salted ricotta is delicious and tasty, to be eaten on its own or grated.
